What Does it Mean to Root An Android Device?

I decided to root my myTouch3G and so far it's going well, I've installed 3 different ROM's on it and I must admit I do enjoy the added benefits and the fact that the device runs so much smoother and faster.

I was very curious about the term "rooting" when I got my myTouch3G.  I saw the term constantly used on various Android Forums.
